The cannister is just an overflow from the fuel tank that catches the fuel and evaporates it into the airbox instead of letting it drip on the ground. Just like in many cars.
If you want to remove it, it is easy, and the ECU won't care. Unplug the servo from the harness, route the vacuum line from the throttle body to the MAP sensor on the tank, and remove the cannister hardware. Keep it - you might be able to sell it to the CA owners buying a new or low mileage bike from out of state.
